I tried the MOB Kitchen chorizo and red pepper orzo during the summer but have adapted the recipe slightly to suit me. It was really easy to make considering I’d never tried orzo before, let alone cooked it. I really enjoyed it as it was really delicious and rich.
Ingredients:
1 red pepper
Handful of cherry tomatoes
1 chorizo ring
500g passata
750ml water
500g orzo
Handful of chopped parsley
Method:
Preheat oven to 180°C.
Chop the red pepper into small 2cm chunks and put in a baking dish with the cherry tomatoes.
Season with salt, pepper and oil and place in the oven for 25 mins.
Chop the chorizo ring into small chunks and place into a large frying pan/wok and fry until it crisps.
Add the passata and the water to the pan and stir together.
Add the orzo and bring to the boil, then turn down and simmer on a medium heat for 10 mins, stirring occasionally to make sure the orzo doesn’t stick on the bottom.
Once the peppers and tomatoes have finished roasting add them to the pan with the chopped parsley and stir altogether.
Then serve on its own or with garlic bread.
